Ricotta cheese tart


Prepare the usual short crust pastry with 300 gms. flour, 150 gms. butter, 100 gms. sugar, 2 eggyolks and the grated rind of half lemon. Mix the ingredients into a dough and leave to rest for an hour. In a small bowl blend together 500 gms. of ricotta cheese, 2 whole eggs, 200 gms. of sugar, a pinch of cinnamon and 2 tablespoons of candy fruits chopped into small pieces. Grease a baking pan with some butter and, with your hands, spread over half the dough. Now spread an even layer of ricotta cheese. With the remaining half of the dough, make long strips and decorate the tart with a criss-cross pattern. Place in a moderate oven for half an hour
